Because I had 4 egg whites left from the cheeses and the oven was still working, I said to make meringues ...

  • 4 egg whites
  • 250 g sugar with small granulation
  • juice of 1/2 lemon
  • a pinch of salt

Preparation time: over 120 minutes


Beat the egg whites with a pinch of salt until they fall back from the bowl. Then add the sugar, little by little and beat well until all the sugar is finished. From time to time we squeeze the juice from 1/2 of lemon. We continue to beat until we get a glossy and very hard foam. Wallpaper a tray with baking paper, put the meringue in a posh and form the meringues. Put the tray in the hot oven, on a very low heat and with the oven door ajar so that they dry well.
